Recently after eating at
Trippy Tacos on Smith street 4 times last week... (yep four times, I clearly love the shit out of it) leaving me satisfied
every time*, all the while amazing me with vegetarian Mexican and taking minimal amounts of money from my pocket, all I crave these days is some spicy delicacy and usually only from the above mentioned, and none better than the hot sauce they have that had me locking horns with some of the most hottest chilli sauce I've ever encountered. I've laughed in the face of chilli sauce labels with claims of
'XXXXTRA HOT' , but I shit you not. I was sweating hard*.
So i'd like to bring you an easy recipe stolen straight from the grill and remixed by yours truly.
I give you:
Taquito's - The Taco that had sex with his Burrito sister.
Ok this is real easy to make, you don't to have mad culinary skills to pull this one off, but a little bit of knowledge helps of course.
What you need:- 2 cups of black eyed peas or kidney beans whole (not refried), Mashed after cooked or mashed with a potato masher out of the can, refried will work but its a better more coarser consistancy when mashed yourself.
- 1 Bag of Tomatos diced or 2 cans of Tomatos
- 1 brown Onion and 1 Red Onion
- Chillis as you please, as much as you can handle
- 2 tablespoons of paprika (hot or smoked...whatevs)
- 1 teaspoon Cumin
- 1/2 diced red Pepper
- 12 corn tortillas
- 1 bunch of Coriander
- 2-3 Avocados
- 1 Lemon
- Sour cream
Method of madness:In a medium-large sauce pan add onion and garlic and brown, then add salt n' pepper, red pepper, chilli, cumin, paprika. Simmer over medium low heat about 20 or 30 minutes. Turn down heat and move on to the taquito shells and Guacamole.
Guacamole - Is about the easiest thing ever. mash that shit with some lemon and salt and pepper, if your feeling squirrelly puts some fine diced red onion and tomato in there too.
Taquitos - For each tortilla spread 1 big spoon of mashed beans around tort but not to the edge and roll up. Heat oil in skillet. Cook tortillas, one at a time, in hot oil until brown and delicious and drain on paper.
Serve 2-3 taquitos on a plate. Serving Salsa, sour cream and guacamole on top to make a hot steamy mess of yumminess*.
Eat that shit, you deserve it.
